I like the basics of food preservation, smoking, curing and their respective guidelines. I would have wanted more pictures for the visual effect but the content makes up for this. I tried the recipe for Smoked Pork Ribs which basically was the 3-2-1 method of smoking ribs. Came out perfect. Although I got this book more for smoking it has a lot of interesting recipes incorporating smoked meats into salad recipes or smoked chicken incorporated with penne pasta and mascarpone. Very nice book, good basic explanation quite a big amount of recipes. Highly enjoyed reading this book.
